Meet Carmen from Simple & Healthy Living
Finding beauty in everyday life via healthy meals from scratch, mindfulness and natural living to combat autoimmune disease.
Hello, I’m Carmen!
Happy you’re here!
My health journey began in 2015. In the course of a biopsy, I was diagnosed with pulmonary sarcoidosis.
Sarcoidosis is a multisystemic granulomatous disease and its hallmark is the formation of granulomas in affected organs. However, lungs are most affected however any organ can be involved. Immunosuppressive therapy is the most commonly used medication – not always leading to the desired results and often involving severe side-effects.
Since this initial diagnosis, I came a long way. I explored new ways of living and new ways of doing everyday things. These comprised a mindful approach to living, how I nourish my body, and how to lead a more natural lifestyle. As a result of these lifestyle changes I discovered that these three paths proofed to be invaluable for my overall well-being and recapturing my health.
On my blog “Simple & Healthy Living” I will share my experiences and hope to provide some “food for thought”. Hoperfully not only for those fighting an autoimmune disease, but also for those simply interested in a healthier lifestyle.

Where I come from
I’m an urban German native and an American country girl at heart. I was born in an urban setting in North Rhine Westphalia in Germany.
When I was a teenager, I moved to the Michigan countryside. Having experienced American country life once, moving back to a normal city life never was an option.
After moving back to Germany and graduating from university, I spend most of my life in small towns close to the countryside.
Where and how I live today
Today, I live with my husband, my two stepsons, our Labrador Retriever “Sir Higgins” my horse “Linus” and two cats “Globetrotter Tom” and “King Louis” in the rural parts of Muelheim an der Ruhr in Germany. On a funny side note: we did not buy these cats … at some point they decided to adopt us and move in with us.
Since being diagnosed with pulmonary sarcoidosis, I am passionate about all things health. At any given point in time, you will find at least one or two food-health-experiments on my kitchen counters. I love making sauerkraut, apple cider vinegar and experimenting with gut-healthy foods.
I am very much into mindfulness practice and a natural lifestyle: be it in the form of whole foods, natural remedies and detoxication.
Apart from this, I have a passion for minimalism. For me minimalism can help you in finding mental freedom. Freedom from fear and worry, freedom from the constant feeling of overwhelm. And, of course, freedom from a pure consumer culture. Owing lesser things made my life much richer.
A few fun facts about me
When I was in Highschool, I competed in a type writing contest (which now actually provides the basis for writing blog posts).
I am a very intentional minimalist, except when it comes to books. You will find books in nearly every niche of my house, most preferably Victorian and English Gothic Literature.
I am a classical music lover and play the piano myself. When you come to our home, you will inevitably enjoy classical music (whether you like it or not), because we always have music playing. All. Day. Long.
Since I was a kid I have been a passionate horse-back-rider and still love spending my free time at the barn.
I am also very passionate about all thing’s organization (very much to the chagrin of my family) and I love reorganizing cabinets, which sometimes makes it difficult for everyone to find stuff again.
Follow along for my favorite gut-healthy recipes, mindfulness practice, natural living and organizational tips! I share 2 new blog posts every single week.
